ML Under Way

All our barrels have now been inoculated for malolactic fermentation.  I’m guessing that our wine will finish ML sometime in November, possibly December.  After that, we’ll keep the wine aging in barrels until it’s time to bottle.

Short on Barrels

We had purchased 28 barrels thinking that we’d have 2 extras and it ends up that we are 3 barrels short (did I mention that Billo has a degree in Applied Mathematics from MIT?…).

Billo at Artifex
